Ceviche of cockles and razor clams

PREPARATION

Finely slice red onion and add to a bowl.

Add small slices of fresh chilli to the bowl.

Cut the avocado into small squares and add it to the bowl.

Chop fresh coriander and set aside.

Open a can of razor clams and add the juice to the mixture.

Cut the razor clams into slices and add them to the dish.

Add a little of the juice and the cockles to the mixture

Add the juice of a lime, corn and fresh coriander.

Add Espinaler sauce to taste

Mix and leave to marinate for 5 minutes.
